Hard Cheese

Yorkshire Fresh Goats’ Milk CheeseSt Helen’s Farm goats’ cheese is a mild cheese that is, typically, matured for about 4 months. It is a firm, Cheddar style cheese that is eminently suitable for slicing, grating and cooking.

The cheese is made at Cricketer Farm, in the cheesemaking county of Somerset. Cricketer is a sister company to St Helen’s Farm and has been making top quality Farmhouse cheeses since the 1940’s and have won many prestigious awards at county shows and cheese events over the years.

Goats’ milk is sent to Cricketer Farm in Nether Stowey where their highly skilled cheesemakers turn fresh milk into delicious cheese. Making cheese is a skilled craft and it is an art that has been passed on within families at Cricketer Farm, where a number of brothers and their sons work side by side.

Grading cheese is also an acquired skill. The graders at Cricketer Farm sample the cheese at each stage of the maturation process until it is judged to be of the correct taste, texture and appearance for packing.
