All Goats’ Butter Shortbread

Goats’ butter makes the perfect shortbread biscuit! Our All Goats’ Butter Shortbread is the perfect accompaniment to our Seasonal Poached Rhubarb.


  • 250g St Helen’s Farm Goats’ Butter
  • 110g caster sugar
  • 360g plain flour
  • ½ orange zest 


Allow the butter to come up to room temperature.

Preheat the oven to 190°C.

Cream the butter and sugar, until smooth.

Add the orange zest.

Sieve in the flour and gently bring the mixture together.

Turn the mixture onto a lightly dusted work surface and roll the dough until 1cm thick.

Cut into rounds or fingers if you prefer and place on a lined baking tray.

Dust with caster sugar and place in the fridge for 20minutes. 

Bake for 15-20 minutes until golden.

Remove from the oven and allow to cool on a wire rack.
