
Banana Bites
These Banana Bites are great for on-the-go or relaxing at home with a cuppa. They are packed with manganese, helping your body produce the energy it needs to fuel you throughout the day.
Energy Boost – High levels of manganese which helps the body produce energy and maintain healthy bones.
A good source of phosphorus – Present in goats’ milk, phosphorus is key to maintain strong bones and teeth.
Stay fuller for longer - The high level of fibre keeps us feeling fuller for longer as it takes longer to digest. Most of the UK eat 30% less fibre than is recommended (nutrition.org.uk).
Ingredients:
- 200g Oats
- 3 Medjool Dates, pitted and finely chopped
- Rind 1 Lemon
- Pinch Vanilla Powder and Cinnamon
- 2 ripe Bananas
- 125g St Helen’s Farm Natural Goats Milk Yogurt
- 2 tablespoons Maple Syrup
- 50g Cacao Nibs
- 1 Banana for decoration
- 2-3 tablespoons of Lemon Juice
Method:
Preheat the oven to 180°C/Fan 160°C/Gas 4. Baking tray - greased (and lined with parchment).
Mix together oats, dates, lemon, vanilla and cinnamon.
Mash banana, add yogurt and maple syrup, stir into oat mixture and mix well. Add cacao nibs.
Spoon onto baking tray and shape into rounds. Dip the banana slices into lemon juice and place one on each of the rounds. Bake for 20-25 mins until golden brown.
