
Blueberry and Chia Layered Yogurt
Our Blueberry and Chia Layered Yogurts are a delicious dessert perfect for the summer months!

Source of omega-3 – Chia seeds are a source of plant-based omega-3 which can help your body with stiffness and joint pain.
A good source of calcium and phosphorus – These minerals are key to maintain strong bones and teeth.
Ingredients:
450g St Helen’s Farm Natural Goats Milk Yogurt
Chocolate Chia Crumbs
50g Almonds
50g Pecans
50g Coconut Flour
50g St Helen’s Farm Butter – melted
2 Dates – pitted
1 tablespoons Cacao Powder
½ tablespoon Chia Seeds
1 tablespoons Maple Syrup
3 tablespoons St Helen’s Farm Semi-Skimmed Goats Milk (add more if needed)
Blueberry Compote
250g Blueberries
Rind of 1 Lime
1-2 teaspoons Honey (optional/to taste)
Method:
Chocolate Chia Crumb
Pre-heat oven 200°C/Fan 180°C/Gas 5. Grease a baking tin (approx. 20cm x 20cm).
In a food processor, blend almonds and pecans until fine, add the remaining ingredients and enough milk so you can bring the mix together into a dough.
Press down evenly in a tin until smooth. Bake 8-10 mins until starting to colour. Remove from oven. Once cooled completely, transfer to food processor and blend to a crumb consistency.
Blueberry Compote
Place blueberries and lime rind in a small saucepan, add 3-4 tablespoons water and honey to taste. Simmer gently for 5-10 minutes until blueberries begin to burst.
Remove from heat and cool.
Assemble
Create layers in 8 x 150ml glass dishes starting with chocolate chia crumbs, yogurt and blueberry compote, and repeat.
