Caramel Apple Crumble Layered Yogurt

They say an apple a day keeps the doctor away, combine that with goodness packed goats’ milk yogurt, and you could be left feeling super-human. But who knows, what we do know is it makes for a super tasty autumnal snack or dessert.   

Ingredients:

150g light muscovado sugar

100g goats’ butter

50ml whole goats’ milk

2 star anise (optional)

zest of 1 lemon

To serve: 

4 eating apples - cored and finely diced

Granola (optional)

450g goats’ yogurt

Method:

In a heavy-based saucepan, melt together sugar, butter and milk. Add the star anise.

Bring to a gentle simmer, stirring occasionally, until the sugar is dissolved. 

Increase the heat to medium-high and cook for 4 to 5 minutes or until deep golden, without stirring.

Remove from the heat and add the lemon zest. 

Once cool, place in a container until ready to serve. 

 

To Serve: 

In a glass or bowl, add the chopped apple, and top with the caramel sauce.

Add the goats’ milk yogurt and top with granola. Serve. 

 

*If preparing the day before, add a splash of lemon juice to the chopped apple to avoid browning.
