
Homemade Lemon Curd with Goats Yogurt
This recipe for homemade lemon curd is incredibly quick and easy to make. Thick and creamy goats’ milk yogurt perfectly complements the mouth-watering zing of lemon curd. We think you’ll love it!
Ingredients:
zest and juice of 2 unwaxed lemons
75g caster sugar
2 eggs
50g goats’ butter
(makes 1 jar)
To serve:
450g goats’ milk yogurt
Fresh mint (optional)
Method:
Whisk together the lemon zest, juice, sugar and eggs in a heatproof bowl. Cut butter into small cubes, then add to the lemon mixture.
Place the bowl over a pan of gently simmering water. Stir frequently until the butter is melted.
Cook for 15-20 minutes, stirring occasionally, until the mixture has thickened.
Remove from the heat and place the mixture in sterilised jars. Set aside and allow to cool before storing in the fridge.
To Serve:
In glass or bowl, add a generous spoonful of the Homemade Lemon Curd.
Top with goats’ milk yogurt and garnish with fresh mint.
