Quick and Easy Fruit Cake

Those magic words - quick and easy. It's true, it really is.


  • 100g St Helen's Farm goats' butter
  • 100g soft brown sugar
  • 2 eggs, beaten
  • 100ml St Helen's Farm goats' milk
  • 225g self raising flour
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • 275g dried mixed fruit


Allow the butter to soften and blend into the sugar with a spoon or electric mixer. Beat until light and creamy.

Sift together the flour and spices.

Gradually stir the milk, eggs and flour and dried fruit into the butter and sugar mixture. Mix well.

Place in a lined and buttered 2lb loaf tin approx 23cm x 13cm.

Make a slight hollow in the middle.

Bake at 170ºC, Gas 3 for about 45 minutes or until firm to touch.
